Vendredi de Vocabulaire: Cerner

Cerner means to suround, to encircle, or to outline. However, according to this cartoon, it also is a culinary term. The culinary sense involves making shallow cuts below the skin of a fruit so that it cooks more easily.

I’m not sure the culinary sense of cerner has an English equivalent. Anyone have any ideas?
