Slow Cooker Pinto Beans

Well, I finally put my slow cooker to use. I made pinto beans, seasoned with a whole dried red chili pepper, some dried cilantro, onion powder, and garlic. They turned out wonderful. These were served over white rice (I left Naomi in charge of the rice cooker, and she didn’t find the brown) with some shredded cheese. A very nice, simple meal that involved very little work on my part.

I’m clearly going to have to do more of this slow cooking stuff. I think it helped that I now have a 3 or 4 quart slow cooker instead of the massive 6 quart one I had before. The new one is a much better size.

I’m also going to have to make something else for the week, so that pinto beans aren’t the only thing I’m eating for the entire week.
